Good game processors are hard to come by across the state - I reside in the Central Maine area and have come across two good ones Bill Melgey - Greenfield Farms - Greenfield Maine - Bill is an older gentlemen who is swift with a skinning knife. He prefers fresh kills over hung deers and depending on how many he has may ask if yours is fresh. Does AMAZING work, great yield out of the deer and makes the BEST hot Italian sausage. All us deer hunters know that deer heart is one delicacy that each of us relish soon after a deer has been taken. The consistency, texture and tenderness of the heart makes me think filet mignon every time it melts in my mouth. However, great recipes can be hard to come by! So what is everyone's favorite!?
